Prize Custard Pie
- 2 1/2 c. milk, scalded
- 1/2 c. sugar
- 1/4 tsp. salt
- 4 eggs, slightly beaten
- 1 tsp. vanilla
- nutmeg
- 1 unbaked pie shell (in a 9-inch glass plate)
- Preheat oven to 475u0b0.
- Combine scalded milk, sugar and salt. Stir until sugar is dissolved.
- Gradually add milk mixture to slightly beaten eggs, stirring until well blended.
- Stir in vanilla.
- Pour mixture into unbaked pie shell.
- Sprinkle top generously with nutmeg.
- Bake on center shelf of oven, which has been preheated to 475u0b0 for 5 minutes.
- Reduce heat to 425u0b0 and continue to bake 10 to 20 minutes or until done.
- (Filling should feel fairly firm to a light touch of the fingertip.
- Don't overbake.)
- Cool to room temperature and serve.
- High beginning temperature and glass pie plate will eliminate soggy, underdone crust.
