Chocolate Filled Cookies
- 1 5/8 cups self rising flour
- 9/16 cup oat bran
- salt
- 9/16 cup softened butter
- 2 3/4 tablespoons heavy cream
- 1 egg yolk
- 5 1/2 tablespoons brown sugar
- cream Pastador, or chocolate
- In a food processor, combine flour, oat bran, and a pinch of salt.
- Add the softened butter and mix.
- The dough should have the consistency of a shortcrust pastry.
- Add the cream and mix until the dough forms a ball.
- Wrap the dough in plastic wrap and refrigerate for 2 hours.
- Preheat oven to 160 degrees Celsius.
- Roll the dough to 3 to 4 millimeters thick.
- Use a cookie cutter to cut out the cookies.
- Arrange them on a baking sheet lined with parchment paper.
- Prick the cookies with a fork and brush with the beaten egg yolk.
- Bake for about 20 minutes.
- When cookies are cooled, take one and spread a spoonful of chocolate cream on top.
- Cover with another cookie and press lightly.
