Zingy Lemon Cheesecake
- 2/3 cup Greek yoghurt
- 1 lemon zest grated
- 2 digestive biscuits
- 1 3/8 tablespoons butter melted
- 2 teaspoons lemon curd
- 1 teaspoon caster sugar
- Place digestive biscuits in plastic food bag or bowl and crush using a rolling pin.
- Melt the butter in a jug for 30 seconds in the microwave (or in a saucepan).
- Once melted, pour the crushed biscuits in a mix well. Split the mixture into two ramekins and press firmly to create the base.
- Place ramekins in the fridge for 30 minutes.
- Place greek yoghurt, lemon curd, sugar and zest together in a bowl and mix well. Split the mixture evenly into the two ramekins and place in the fridge for a further 30 minutes or until ready to serve.
- We suggest serving with a few sliced strawberries or blueberries (or both!).
