Heart Shaped Egg & Cheese Nibbles
- 8 eggs large organic
- 8 slices reduced fat american cheese
- 1 tablespoon butter cooking spray
- 4 whole English muffins Grain Light, split
- 3 inches cookie heart shaped, cutter
- 1.) Melt butter in a large sprayed skillet over medium-high heat with butter and toast English Muffins on a large baking tray in the oven.
- 2.) While muffins are toasting crack eggs gently into a mixing bowl and do not whisk. Pour eggs into greased pan and let cook until set.
- 3.) Slide the eggs onto a clean surface and using your cookie cutter cut out the heart shape around the yolk.
- 4.) Place a piece a piece of cheese on top of the toasted English muffin along with egg cut-outs. SERVE & ENJOY!!!
- Nic's Tips - If you would like the eggs more cooked, place the open-faced sandwich back in the oven on your baking sheet for a couple of minutes before serving.
