Honey Cake(Israel)
- 1 tsp. plus 1/4 c. vegetable oil
- 2 1/4 c. all-purpose flour
- 1/4 c. seedless raisins
- 1/4 c. chopped candied orange peel
- 3 egg yolks
- 3/4 c. honey
- 1/3 c. sugar
- 2 tsp. finely grated lemon peel
- 3 egg whites
- 4 1/2 tsp. instant coffee, dissolved in 1 Tbsp. boiling water
- 1/4 tsp. baking soda
- 1 tsp. baking powder
- 1/4 tsp. ground cinnamon
- 1/4 tsp. ground allspice
- pinch of cloves
- 1/4 tsp. salt
- 1/2 c. sliced blanched almonds
- Preheat oven to 325u0b0.
- Coat bottom and sides of a 9 x 5 x 3-inch pan with 1 teaspoon oil.
- Sprinkle the pan with 2 tablespoons flour, tipping from side to side.
- Cover evenly.
- Turn pan upside down and rap sharply to remove excess flour.
- Stir raisins and orange peel in a bowl with 2 tablespoons flour until evenly and lightly coated.
- Set aside.
