Egg And Orange Spinach
- 1 lb. fresh spinach
- 2 oranges
- 1/3 c. salad oil
- 3 Tbsp. vinegar
- 1 Tbsp. sugar
- 2 tsp. sesame seed, toasted
- 3/4 tsp. celery salt
- 1/4 tsp. dry mustard
- 1 (8 oz.) can water chestnuts, drained and sliced (optional)
- 6 hard-cooked eggs, sliced
- Wash spinach in lukewarm water.
- Drain well.
- Chill thoroughly to crisp.
- Peel and section oranges, reserving 1 to 2 tablespoons juice for dressing.
- Combine reserved orange juice, salad oil, vinegar, sugar, sesame seed, celery salt and mustard, stirring until blended and sugar is dissolved.
- Tear spinach into bite size pieces into large salad bowl.
- Add orange sections and water chestnuts.
- Toss to mix.
- Add egg slices.
- Pour dressing over all.
- Toss gently to thoroughly mix and evenly coat ingredients.
