Pumpkin Spice Biscotti
- 2 large eggs
- 150 grams sugar
- 1 tbsp. orange zest
- 1 tsp. baking soda
- 1/2 tsp. nutmeg
- 1 tsp. ground cinnamon
- 1 tsp. ground ginger
- 1/2 tsp. ground cloves
- 1/2 tsp. ground cardamom
- 1/2 tsp. ground star anise
- 1/2 tsp. ground allspice
- 200 grams all-purpose flour
- 100 grams whole wheat flour
- 100 grams walnut
- 1/4 tsp. salt
- Preheat oven to 350 degrees F (175 degrees C)
- In a large bowl, using an electric mixer, beat eggs, sugar, orange zest, spices, salt and baking soda.
- Beat mixture and flours until combined.
- Dough into two parts. Prepare pieces, like 30 cm baguette. Place onto a baking sheet lined with baking paper.
- Bake for 30 minutes. After first baking, cool (wait 30 min) and slices (approximately 1 cm)
- Second bake for 30 minutes in preheat oven to 300 degrees F (150 degrees C)
