Crepes With Cod And Kale

  1. Stir the eggs with the milk and butter, then add the flour. Whisk until everything is well blended, without any lumps.
  2. If you think that the dough is too thick, just add a little more milk.
  3. Whisk in the chopped parsley.
  4. Saute the onion, garlic, and bay leaf in olive oil.
  5. Add the pieces of cod and the kale.
  6. Cook over low heat until cod and kale are done.
  7. Correct the salt and pepper, and let cool.
  8. In a non-stick pan add a little butter on medium heat. Pour in spoonfuls of dough covering the bottom of the pan. Once the crepe is cooked on one side, flip over, and cook the other side.
  9. Repeat the process until you use up all the dough.
  10. Divide the cod and kale mixture in the crepes. Fold crepes over in a wrap.
  11. Serve warm with a salad.
