Skirt Steak Fajitas With Tequila Orange Lime Marinade

  1. 1. Mix the orange juice, lime juice, tequila, cilantro, and jalapeno together and marinate the steak in it for 15 minutes to 1 hour in the refrigerator.
  2. 2. Saute the onion slices over medium heat until they have caramelized and partially turned brown. Reserve in a 200 *F oven with the serving plates.
  3. 3. Grill or saute the marinated steak until the internal temperature reaches 120 *F for rare or 130*F for medium rare. Let the steak cool and slice it into 1/4 inch slices then reserve with the serving plates and onions.
  4. 4. Pour the oil into a clean saute pan and saute(sweat) the julienned peppers and garlic for a few minutes until they start to soften.
