Piri Piri Shrimp
- 1/3 cup olive oil
- 1/4 cup cilantro leaves picked, plus more leaves, to serve
- 1/4 cup parsley leaves picked
- 1 lemon
- 8 red chilies
- 4 garlic cloves roughly chopped
- 1/2 inch ginger piece, peeled and roughly chopped
- 1 pound shrimp large raw, peeled, heads and tails intact
- 8 bamboo soaked, skewers
- lemon wedges to serve
- In a food processor, combine oil, herbs, zest, juice, chilies, garlic, and ginger. Process to a smooth paste. Season to taste.
- In a medium bowl, combine 1/4 of the paste with shrimp. Place the remaining paste in a serving bowl. Marinate shrimp for at least 30 minutes.
- Thread 3-4 prawns onto 2 skewers (through head and tail), so you can use skewers as handles to turn shrimp.
- Heat an oiled outdoor grill or indoor grill pan to medium. Cook shrimp 2-3 minutes each side, until just cooked through. Serve scattered with more cilantro. Accompany with remaining sauce and lemon wedges.
