Turkey In Mexican Chocolate Sauce
- 2 tablespoons butter
- 1 onion finely diced
- 1 clove garlic finely diced
- 1 cup vegetable broth reduced-sodium
- 1 tomato peeled and finely chopped
- 2 1/2 ounces dark chocolate grated
- 2 teaspoons hot pepper sauce
- 1 1/2 pounds turkey cutlets cut into 2-inch pieces
- cilantro sprigs
- sesame seeds
- basmati rice Freshly cooked, for serving
- Melt 1 tbsp butter in a large saucepan over medium heat. Add the onion and garlic and cook for 5-6 mins. Add the broth and tomato and bring to a simmer. Stir in the chocolate until melted. Add the hot pepper sauce and season with salt and pepper.
- Meanwhile, melt the remaining butter in a large nonstick skillet over medium-high heat. Add the turkey and cook, stirring often, for 5 mins until browned and cooked through. Stir into the sauce and warm through. Divide the mixture among plates and garnish with the sesame seeds and cilantro. Serve hot over basmati rice.
