Apricot Chicken With Rice
- 2 tablespoons all-purpose flour
- 1 tablespoon chicken seasoning mix Portuguese
- 1 1/4 pounds chicken breasts trimmed, thickly sliced
- 2 tablespoons vegetable oil
- 1 white onion halved, thinly sliced
- 1 2/3 cups apricot juice
- 7 ounces apricots halved dried
- 1 red pepper large, cut into 1 inch pieces
- 5 1/4 ounces green beans trimmed
- 2 tablespoons fresh flat leaf parsley chopped
- long grain white rice cooked, to serve
- Combine flour and seasoning mix. Coat chicken. Heat 1 tbsp oil in a large frying pan over medium heat. Add chicken and cook for 5-8 mins, or until seared. Remove from heat. Add remaining oil to pan. Add onion and cook for 4-5 mins, or until soft. Add apricot juice and 1/2 cup water. Bring to a boil. Return chicken to pan along with apricots. Simmer, uncovered, stirring occasionally, for 10 mins, or until chicken is cooked and sauce thickens slightly.
- Add pepper and beans and cook for 3-5 mins, or until vegetables are tender. Remove from heat and add parsley. Distribute rice between serving plates. Top with chicken mixture. Serve immediately.
