Sweet Potato Layer Cake
- 1 1/2 c. vegetable oil
- 2 c. sugar
- 4 eggs, separated
- 1 1/2 c. finely shredded uncooked sweet potato
- 1/4 c. hot water
- 1 tsp. vanilla extract
- 2 1/2 c. cake flour
- 3 tsp. baking powder
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1/4 tsp. salt
- 1 c. pecans, chopped
- In a mixing bowl, beat oil and sugar. Add egg yolks, one at a time, beating well after each addition. Add sweet potato, water and
- vanilla; mix well. In a small mixing bowl, beat egg whites until stiff, fold into the sweet potato mixture. Combine flour, baking powder, cinnamon, nutmeg and salt; add to potato mixture. Stir in pecans. Pour into three greased 9 inch round cake pans. Bake at 350u0b0 for 22-27 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing to wire racks.
