Asian Mussels With Pork
- 2 tablespoons oil
- 5 1/4 ounces pork tenderloin cut into thin strips
- 3 1/2 ounces bacon diced
- 2 shallots peeled and finely diced
- 2 cloves garlic peeled and finely diced
- 1 stalk lemongrass halved, center finely chopped
- 2/3 inch fresh ginger peeled and grated
- 4 tablespoons soy sauce
- 1 lime juiced
- 2 tablespoons fish sauce
- 1/4 pound beansprouts
- 4 1/2 pounds mussels fresh, scrubbed, beards removed, any open shells discarded
- 6 sprigs fresh cilantro finely chopped
- 1/2 cup peanuts roughly chopped
- Heat the oil in a Dutch oven and sear the pork and bacon until browned. Add the shallots, garlic, lemongrass and ginger and saute for 2 mins. Add the soy sauce, lime juice, fish sauce, beansprouts, mussels and 1/2 cup water. Cover and simmer for 8 mins, until the mussels have opened.
- Discard any unopened shells and sprinkle with the cilantro and peanuts.
