Easy Vegetable Lo Mein
- 1 pound noodles hokkien or spaghetti
- 3/4 cup chicken broth
- 1/2 cup soy sauce
- 2 teaspoons sugar
- 2 tablespoons peanut oil
- 8 scallions thinly sliced
- 2 carrots sliced diagonally
- 1/2 pound fresh mushrooms sliced
- 1/2 pound broccoli fresh
- 1/3 pound sugar snap peas fresh
- 1 orange pepper red bell, yellow and, cut lengthwise
- 1 onion small
- Make your noodles according to the package directions. Drain and keep warm.
- In a small bowl, combine chicken broth, soy sauce, and sugar. Mix well and set aside.
- In a large skillet, heat oil over high heat. Add vegetables to the chicken broth mixture.
- Stir fry 3 to 5 minutes or until vegetables are crisp-tender. Toss with the noodles and serve.
