Carp Soup

  1. Cook the potatoes and carrot in a pot of lightly salted boiling water for 10 mins until just tender. Drain and set aside.
  2. Meanwhile, heat the butter in a large pan and saute the onion, leek and garlic over a medium heat for 5 mins. Stir in the cumin, paprika and marjoram and cook for 1 min. Add the stock, tomato paste and drained vegetables and bring to a boil. Reduce the heat to a simmer and add the cubed fish. Cook gently for 8-10 mins until the fish is just cooked. Season to taste. Serve in warmed bowls garnished with the watercress.
