Ciabatta With Meatballs
- 5 1/4 ounces ground meat
- 1 egg yolk
- 1 tablespoon mustard
- 2 tablespoons breadcrumbs
- 1/2 onion peeled and chopped
- salt
- ground black pepper
- olive oil
- bacon
- 1 ciabatta loaf
- lettuce
- spinach
- arugula
- Parmesan cheese grated
- In a bowl, add the ground meat, egg yolk, mustard, breadcrumbs, and onion. Season with with a pinch of salt and black pepper and mix well.
- Shape into small balls.
- In a saucepan, heat olive oil and cook the meatballs for 12 to 14 minutes until golden brown on all sides. With 3 minutes before the meatballs are done, add the bacon slices.
- Slice the ciabatta loaf in halves. Add lettuce, spinach and arugula, and drizzle with olive oil. Add the meatballs and bacon, and sprinkle with Parmesan cheese.
- Close the ciabatta bread, cut into half, and serve.
