Madeira Cake With Lemon Icing
- 1 1/2 cups (225g) wholemeal spelt flour (or flour of choice)
- 1/2 cup (90g) Natvia
- 1 1/2 teaspoons baking powder
- 2 eggs
- 1/2 cup (160g) apple sauce
- 1/2 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- Icing:
- 1 cup (200g) Natvia icing mix
- 2 tablespoons lemon juice
- Preheat oven to 180C. Grease and line a loaf tin with baking paper.
- In a large bowl, combine the flour, baking powder and Natvia. In a separate bowl, whisk together the eggs, apple sauce, milk and vanilla.
- Make a well in the centre of the dry ingredients, and add the wet, whisking to combine.
- Pour batter into prepared pan. Bake for 35-45 minutes until a skewer inserted comes out clean. Transfer to a wire rack to cool.
- To make the icing, combined Natvia icing mix and lemon juice in a small bowl. Once cake is cooled, drizzle over the lemon icing.
