Best Fried Chicken Ever

  1. Make the steel oats flour by finely espresso grinding the oats in a coffee grinder.
  2. Combine all the flour, pancake mix, corn meal, bread crumbs and seasonings together in a large zip lock bag. (this is your breading)
  3. Melt down the butter with the milk in a microwave or saucepan until it's a light yellow even mixture..
  4. Beat the two eggs with the buttermilk mixture until evenly blended.
  5. Place chicken inside the breading bag 1 piece at a time and shake.
  6. Dip chicken in the egg wash mixture, making sure each piece is covered thoroughly.
  7. Place each piece back into the breading mixture 1 at a time and shake until fully coated.
  8. With a large boiler pot fill with 1.5 liters of all natural vegetable oil to a medium hi temperature..
  9. Slowly enter each piece of breaded chicken to the hot oil making sure the breading doesn't stick to the bottom, stir occasionally.
  10. Cook uncovered for 30 to 45 mins depending on the size and cut of chicken. (Golden brown or dark brown the darker the crunchier.)
  11. Remove chicken from boiler, pat down with paper towel, let cool down and serve.
  12. Optional: add a slice of lemon and lime for garnish and squeeze to add a zest between bites.
