Curried Tuna Salad In Lettuce Wraps
- 7 ounces tuna in the can, packed in water and drained
- 2 tablespoons carrot peeled and shredded
- 1 rib Small Celery Heart, with Leaves, chopped
- 1 scallion chopped with green tops set aside
- 1/2 jalapeno pepper seeded and chopped
- 1 1/2 tablespoons Madras curry powder
- 4 tablespoons Vegenaise or Mayonnaise
- cracked black pepper
- salt
- 4 lettuce leaves Large Red Leaf, washed and dried of excess water
- 1/2 lemon cut into wedges
- 1 tomato chopped or 5 to 6 Cherry Tomatoes halved
- Sriracha to taste
- scallion
- fresh tomato
- fresh lemon juice
- Sriracha
- In a mixing bowl, mix drained tuna with shredded carrot, chopped celery & leaves, chopped scallion (white part), chopped jalapeno pepper, Madras curry powder, Vegenaise or Mayonnaise, salt and black pepper.
- On a large plate, arrange lettuce leaves fanning them out. Stem sides to the center of the plate.
- Divide Curried Tuna Salad on top of lettuce leaves.
- Add desired garnishes: chopped scallion greens, tomato, freshly squeezed lemon juice and / or Sriracha hot sauce
- "Wrap" up the tuna salad in the lettuce like a small package.
