Chocolate Mousse-Filled Puff Pastry Knots

  1. Preheat the oven to 200 degrees Celsius.
  2. First make the knot molds. Take a large piece of aluminum foil and fold it corner to corner three times, ending with a thick triangle. Roll one side of the triangle towards the other to make a 3D cone shape. Do not flatten.
  3. Next, cut the puff pastry into 2-inch strips.
  4. Lay the skinny pointed end of the knot mold onto one end of the puff pastry. Roll the puff pastry around the mold, working your way up towards the thick end of the mold like a spiral.
  5. Bake about 12 minutes until golden.
  6. While the puff pastry is baking, make the chocolate mousse. In a saucepan, melt the chunked chocolate and milk together.
  7. Once melted, remove from heat and whisk in the butter until melted.
  8. Separately, in a small bowl beat the egg yolks and sugar together with a fork. Whisk into the chocolate.
  9. Separately, beat the egg whites with a pinch of salt into firm peaks. Carefully fold into the chocolate.
  10. When the puff pastry knots have cooled, fill them with the chocolate mousse then refrigerate them until set.
