Buffalo Cauliflower Bites With Sriracha-Lime Sauce

  1. Pre-heat oven to 450 degrees F. Combine the first 8 ingredients in a bowl and stir to combine. Add water to the bowl and mix batter until it's well incorporated and thin. Dump the cauliflower into the batter and coat evenly. Shake off excess batter and place cauliflower on a KitchenAid(R) Professional-Grade Nonstick Jelly Roll Pan. Bake for 15-20 minutes, until the crust has become solid.
  2. Meanwhile, make the Sriracha sauce by putting all the ingredients in a 1.5-Quart Saucepan from the KitchenAid(R) Aluminum Nonstick 10-Piece Set over medium heat. Cook until the butter has melted, check to make sure the mixture is well-seasoned, and remove from the heat. You may need to add a little more lime juice or honey.
  3. Take the cauliflower out of the oven after a crust has formed, and gently place in a large bowl. Pour over half of the sriracha sauce and toss to combine, adding more sauce if necessary. Place back in the pan, and bake for another 15-25 minutes until crispy.
  4. For the blue cheese sauce, add all the ingredients to a bowl and mix well. Taste and adjust seasoning if necessary.
