Hearty Baked Macaroni(Health Conscious)
- 1 (16 oz.) can tomato puree
- 1 c. water
- 2 tsp. Italian seasoning
- 1 tsp. garlic powder
- 1 1/2 lb. low-fat cottage cheese
- 1/2 tsp. onion powder
- 1 (8 oz.) pkg. elbow macaroni (uncooked)
- 4 oz. Mozzarella cheese, sliced
- In a small bowl, combine tomato puree, water, Italian seasonings and 1/2 teaspoon garlic powder.
- In another bowl, combine cottage cheese, onion powder and the remaining garlic powder.
- Spray with vegetable cooking spray a 9 x 9 x 2-inch casserole dish.
- Spoon 1/3 of the tomato mixture in the dish. Layer 1/2 of the macaroni, all of the cheese mixture, 1/3 of the tomato mixture, the remaining 1/2 of the macaroni, then the remaining 1/3 of the tomato mixture.
- Cover; bake at 350u0b0 for 1 hour.
- Uncover; top with Mozzarella cheese.
- Bake, uncovered, until cheese melts, about 5 minutes.
- Let stand before serving.
