Key Lime Macadamia Nut Cookies With White Chocolate Glaze
- 1 3/4 cups flour
- 3/4 cup powdered sugar
- 1 cup butter softened
- 1 tablespoon key lime juice
- 2 teaspoons lime zest
- 3/4 cup macadamia nuts finely ground
- 1 cup powdered sugar
- 1 teaspoon lime zest
- 2 tablespoons key lime juice
- 1 ounce white chocolate melted
- Sift together flour and powdered sugar. Set aside.
- Beat butter until creamy.
- Add flour, key lime juice, zest, and macadamia nuts. Mix until dough forms.
- On a lightly floured sheet of wax paper, form the dough into a 10 inch log.
- Roll the log in the wax paper and refrigerate until firm, 2 hours.
- Preheat oven to 350u0b0.
- Cut dough log into 1/4-inch slices. Place on a baking sheet.
- Bake 9-11 minutes or until edges are lightly browned.
- Cool completely and then glaze.
- For the glaze, whisk all ingredients together.
- Add more powdered sugar if it's too runny.
