Curried Cauliflower Fritters
- 9 ounces cauliflower cut into small florets
- 1/2 cup all purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 teaspoons mild curry powder
- 2 large eggs
- 1 cup milk
- 1 red chili long, seeded and finely chopped
- 2 scallions finely chopped
- 1 tablespoon canola oil
- 4 poppadums, microwaved, to serve
- baby arugula to serve
- Cook the cauliflower in boiling water for 2-3 mins, or until just tender, then drain.
- Sift the flours, baking powder, salt and curry powder into a large bowl, adding the husks from the sieve. Make a well in the center. Whisk the eggs and milk in a separate bowl and add to the flour mixture, whisking until smooth. Stir in the cauliflower, chili and scallion.
- Heat 1 teaspoon of oil in a large frying pan over a moderate heat.
- To make each fritter, spoon 1/2 cup of mixture into the pan and flatten slightly. Cook for 1-2 mins each side, or until golden and crisp. Drain on paper towels. Add more oil and reheat the pan between batches when necessary.
- Serve the fritters with poppadums and baby rocket.
