Red Pepper And Ginger Soup
- 1 tablespoon olive oil
- 2 onions chopped
- 4 red peppers deseeded and chopped
- 1 garlic clove crushed
- 2 inches fresh root ginger piece of, chopped
- 2 teaspoons ground paprika
- 3 cups vegetable stock
- 1/4 cup sour cream
- 1 tablespoon chopped parsley

- Heat the oil in a large pot. Add the onions and peppers and cook gently for 10 minutes, stirring frequently. Add the garlic, ginger and paprika and cook for 3 minutes.
- Stir in the stock and bring to a boil. Reduce heat and simmer for 15 minutes. Add the parsley and blend using a food processor or immersion blender.
- Return to the pot and stir in the sour cream. Reheat gently and season to taste. Ladle into bowls, swirl with a little extra sour cream and sprinkle with chopped parsley.
