Red Pepper And Ginger Soup

  1. Heat the oil in a large pot. Add the onions and peppers and cook gently for 10 minutes, stirring frequently. Add the garlic, ginger and paprika and cook for 3 minutes.
  2. Stir in the stock and bring to a boil. Reduce heat and simmer for 15 minutes. Add the parsley and blend using a food processor or immersion blender.
  3. Return to the pot and stir in the sour cream. Reheat gently and season to taste. Ladle into bowls, swirl with a little extra sour cream and sprinkle with chopped parsley.
