Leek, Ham, Apple And Potato Bake
- 2 leeks
- 1 tablespoon butter
- 1 1/3 pounds potatoes thinly sliced
- 4 ounces sliced ham thinly
- 3 apples cored and thinly sliced
- 3 eggs
- 2/3 cup heavy cream
- 2/3 cup milk
- grated nutmeg Freshly
- 1 3/4 cups grated cheddar or Gruyere cheese
- 2 tablespoons chopped hazelnuts coarsely
- Preheat the oven to 375u0b0F. Grease 4 individual shallow baking dishes. Trim the leeks and halve lengthwise.
- Melt the butter in large skillet on medium heat. Cook the leeks for 3-5 mins, turning once until beginning to soften. Layer the potatoes, ham and apples in the dishes. Arrange the leeks on top.
- Whisk the eggs, cream and milk in medium bowl. Add plenty of freshly grated nutmeg and salt and pepper. Pour the mixture over the vegetables and sprinkle with the cheese. Cover with foil.
- Bake for 20 mins. Remove foil and and sprinkle with the hazelnuts. Bake for a further 25 mins or until the potatoes are tender.
