Radish, Smoked Trout And Watercress Salad
- mustard dressing
- 1/2 cup extra virgin olive oil
- 1/4 cup lemon juice
- 1 tablespoon sour cream
- 2 teaspoons dijon mustard

- radish
- 1 pound smoked trout skin and bones removed, flesh flaked into bite-sized pieces
- 3 mini cucumbers peeled, halved lengthwise, seeded, thinly sliced
- 2 tablespoons fresh dill chopped, a little reserved to garnish
- 1 bunch radishes thinly sliced
- 1/2 daikon radish thinly sliced
- 1 bunch watercress tough stems removed
- 1 bunch fresh chives snipped, a few reserved to garnish
- To make the mustard dressing, whisk together all ingredients in a bowl until well combined. Season.
- Combine smoked trout, cucumbers, dill and 1/2 the dressing. Toss to combine.
- In a separate bowl, combine radishes, watercress and chives. Toss with remaining dressing. Combine with smoked trout mixture and sprinkle with reserved herbs.
