Sugar-Free Valentines Cookies
- 1/4 cup butter
- 1/4 cup cream cheese
- 1/2 cup powdered sugar Replacement
- 1/4 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups almond flour
- 1 1/2 tablespoons meringue powder
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon lemon juice
- 2 cups splenda powedered
- 1/4 cup warm water
- In a large bowl, cream butter and cream cheese for 1 minute.
- Add the sweetener, baking powder, vanilla, and salt and continue mixing until creamy.
- Mix in almond flour and chill for atleast 1 hour.
- Preheat oven to 300 F
- Roll out the chilled dough until 1cm thick and use cookie cutters to cut out cookies.
- Use a spatula to place the cookies on a baking sheet about 1 inch apart and bake for 12-15 minutes or until the edges are golden brown.
- For the icing: in the bowl of the mixer, whip together the sugar and meringue powder.
- Add the vanilla extract and lemon juice
- Add the water. Beat for approximately 5 minutes or until stiff peaks begin to form.
- Transfer small amounts to a clean bowl and add very small increments of water to the icing to thin it down to medium or flood consistency. Add food coloring if desired.
- transfer to pastry bag.
- Allow icing to dry 12 hours before handling.
