Brownie Cookie Sandwich
- 350 grams dark chocolate
- 56 grams butter
- 2 large eggs
- 2/3 cup sugar
- 1 teaspoon vanilla essence
- 1/4 cup self raising flour
- 250 grams cream cheese
- 1 1/2 cups Nutella
- 3 1/2 cups icing mixture
- Preheat oven to 160 degrees C and line baking trays with baking paper.
- Melt 200g of dark chocolate with the butter till smooth. Let sit for 10 minutes.
- Place eggs, sugar and vanilla in a large bowl and beat till thick and creamy and pale.
- Add in SRF and chocolate mixture into egg mix.
- Chop remaining chocolate and stir through.
- Set aside for 10 minutes.
- Spoon 1 tbs of the batter onto the tray and leave space between the cookies as you spoon them due to spread.
- Bake for 8-10 minutes or till puffed and cracked.
- Allow to cool completely on trays.
- Frosting: Beat cheese and Nutella till smooth. Add in icing mixture 1/2 cup at a time till desired consistency.
- Frost cooled cookies on their back with 1 tbs of frosting and squish a similar cookie on top to make the cookie sandwich.
