Pepparkakor (Swedish Ginger Cookies)
- 3 3/4 c. sifted flour
- 1 Tbsp. ground ginger
- 2 tsp. ground cinnamon
- 1 tsp. ground cloves
- 1/2 tsp. ground allspice
- 1/2 tsp. ground nutmeg
- 1 tsp. baking soda
- 1 c. butter or margarine
- 1 c. sugar
- 1 egg
- 1/2 c. Grandma's molasses
- Sift flour, spices and baking soda together.
- Cream the butter or margarine.
- Add sugar gradually, beating until fluffy.
- Add egg and molasses; beat well.
- Add flour mixture gradually, beating until well blended.
- Wrap and chill overnight.
- Roll out a small amount of dough at a a time on floured board; cut with floured cutters.
- Place about 2 inches apart on lightly-greased cookie sheets.
- Bake at 350u0b0 for 8 to 10 minutes or until lightly browned.
- Cool on wire racks.
