Falafel With Edamame
- 1 onion diced
- 2 garlic cloves diced
- olive oil
- 1 tablespoon cumin
- 1 teaspoon ground coriander
- 1/2 pepper
- 3 3/8 cups beans edamame
- 1 bunch parsley
- 1 lemon juice and zest
- 2 tablespoons flour
- 2 tablespoons bread crumbs
- buns pita
- hummus
- lettuce
- sprouts
- mint
- yoghurt
- Saute onion and garlic in olive oil.
- Add cumin, coriander, and pepper, and cook until a nice smell becomes easily perceptible.
- Mix the edaname beans with the parsley and lemon juice. Add to onion mixture. Mix well.
- Stir in flour, breadcrumbs, and lemon zest.
- Form the falafel balls.
- In a wok, heat the oil, and brown the falafels for a few minutes.
- To serve, arrange on each pita bread, a spoonful of humus, lettuce, sprouts, mint, and some falafel balls. Top falafels with yogurt.
