Cinco De Mayo Fiesta Bites

  1. Preheat oven to 375 degrees F and grease a mini muffin pan.
  2. If you are making flats, grease a baking sheet or put down silpat/parchment paper.
  3. In a large bowl, whisk butter and eggs.
  4. Add eggs and whisk to combine.
  5. Add yogurt and milk and whisk to combine.
  6. In a smaller bowl, combine all dry ingredients.
  7. Add dry ingredients to wet ingredients and whisk to combine.
  8. Fill the muffin cups halfway, so they come out short. If you are making flats, roll the dough into 1 1/4" balls with damp hands and press to 1/4" flat on the baking sheet.
  9. Bake muffins for 12 minutes and flats for 15 minutes, or until golden and edges become lightly browned.
  10. Cool for five minutes.
  11. Top with a bit of tomato sauce and a dollop of guacamole.
  12. Add a slice of grape tomato as garnish.
