Cinco De Mayo Fiesta Bites
- 1/4 cup butter
- 1/4 cup sugar
- 2 eggs
- 1 cup plain greek yogurt
- 1/4 cup milk dairy or other
- 1/2 teaspoon baking soda
- 1 cup cornmeal
- 1 cup brown rice flour or other flour of your choice
- 1 teaspoon xantham gum if you are using a gluten-free flour that doesn't already contain it, or omit if you are using wheat flour
- 1/2 teaspoon salt
- tomato sauce
- guacamole
- grape tomatoes for garnish.
- Preheat oven to 375 degrees F and grease a mini muffin pan.
- If you are making flats, grease a baking sheet or put down silpat/parchment paper.
- In a large bowl, whisk butter and eggs.
- Add eggs and whisk to combine.
- Add yogurt and milk and whisk to combine.
- In a smaller bowl, combine all dry ingredients.
- Add dry ingredients to wet ingredients and whisk to combine.
- Fill the muffin cups halfway, so they come out short. If you are making flats, roll the dough into 1 1/4" balls with damp hands and press to 1/4" flat on the baking sheet.
- Bake muffins for 12 minutes and flats for 15 minutes, or until golden and edges become lightly browned.
- Cool for five minutes.
- Top with a bit of tomato sauce and a dollop of guacamole.
- Add a slice of grape tomato as garnish.
