Lamb Sausage And Feta Bruschetta
- 2 teaspoons vegetable oil
- 6 lamb sausages thick
- 1 large tomato cut into 1/2 inch pieces
- 1 persian cucumber peeled, cut into 1/2 inch pieces
- 1 red onion small, finely chopped
- 2 1/2 ounces feta Greek-style, cut into 1/2 inch pieces
- 1 tablespoon fresh oregano leaves coarsely chopped, plus extra leaves to serve
- 8 slices white bread crusty, toasted, to serve
- 2 ounces baby arugula to serve
- lemon wedges to serve
- Heat 1 tsp oil in a frying pan over medium heat. Cook sausages, turning, for 10-12 mins, or until cooked through. Set aside, cover with foil and let rest for 5 mins. Slice thickly.
- Meanwhile, combine remaining oil, tomato, cucumber, onion, feta and oregano in a medium bowl. Season.
- To serve, place toast on serving plates. Top with arugula, sausage and Greek salad. Serve with lemon wedges and sprinkle with oregano leaves.
