Turkey Burgers With Shredded Zucchini And Carrots And Chipotle Mayo
- 1 pound ground turkey breast
- 1 medium zucchini grated
- 1 medium carrot grated
- 2 cloves minced garlic
- 3/4 teaspoon dried thyme
- 3/4 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1 large egg
- 3 tablespoons olive oil
- 1/2 buns horizontally, then cut into triangles for the

- 4 cheese slices Provolone
- 1/2 cup mayo I used reduced fat mayo made with olive oil
- 2 chiles Adobe, I used canned adobe chiles in adobe sauce found in the Hispanic section of the grocery store
- 2 tablespoons sauce adobe, from the canned adobe chiles
- In large bowl, combine the turkey, zucchini, carrot, garlic, thyme, salt, pepper, and egg. Mix together with your hands...sounds kind of gross but it's the easiest way to get it all mixed evenly.
- Form into patties. I got 7 patties out of it but it can vary depending on how big you want your burgers.
- Heat 1 tbsp oil in large skillet over medium heat. Cook the patties, turning once on each side, until there is no longer any pink. This takes about 4-5 minutes each side depending on how big you make your patties.
- When your patties are almost done cooking, brush the focaccia with the remaining olive oil, then place under broiler for about 1 minute.
- When the focaccia buns and burgers are done, place one patty on top of half of a bun, top with cheese and place under broiler for 1 more minute to melt cheese. Top with lettuce and chipotle mayo (recipe below) and enjoy!
- Place all ingredients in food processor and blend until completely mixed
