Party Turkey
- 1 1/3 pounds turkey steaks
- 1/2 lemon juice
- 1 onion
- 2 garlic cloves
- 1 tablespoon thyme
- 1 leek white part only, save the rest to make soup
- 3 carrots
- 1 7/8 tablespoons olive oil
- salt to taste
- freshly ground pepper
- 5 9/16 cups potato sticks
- 2 11/16 cups milk
- 9/16 cup wholemeal flour
- 2 1/8 tablespoons oil
- 1/2 lemon
- salt to taste
- nutmeg
- pepper
- 2 tablespoons Azores island cheese
- 1 3/8 cups bread preferably whole wheat
- 2 garlic cloves
- Dice the steaks in small cubes and season with salt, pepper and thyme.
- Chop the onion and garlic, grate the carrots and cut the leek into thin slices.
- Saute with olive oil.
- Add the turkey and cook on low heat until the meat is soft and tender.
- Preheat the oven to 350u0b0F.
- Prepare the Bechamel sauce:
- Heat the oil and add the flour.
- Stir well until the flour is cooked.
- Gradually add the preheated milk slowly, stirring constantly to avoid lumps forming.
- Season with salt, pepper and nutmeg.
- (If eventually the sauce becomes lumpy, mash with the magic wand and go into the strainer)
- Place the stuffed turkey in a refractory tray and add the potato sticks, this trick will result in less fat.
- Add a cup of bechamel sauce and mix well.
- After smoothing the surface, spread the remaining bechamel sauce.
- Grind the ingredients for the coating and spread to cover the top.
- Brown in the oven for 20 minutes or until the bread is golden.
