Githeri
- 2 cups corn or cut fresh off the cob 3 to 4 ears
- 2 cups beans Cooked, any type -
- 1/2 kilogram beef chopped
- 3 tomatoes grated
- 1 tea spoon tomato paste
- 1 onion large cubed
- 3 cloves crushed garlic
- curry powder
- 2 cubes carrots
- water - to cover
- salt
- pepper
- Fry the onions and garlic till browned in some oil
- Add in the meat and allow to brown all over
- Add in the grated tomato and tomato puree and let it simmer for 4 mins
- Add in the pepper and a teaspoon of curry powder and allow to simmer with the pot lid down for 4 mins
- Toss in the carrots with a 1/4 cup of water and allow to simmer with the pot lid down for 5 mins
- Add the corn and beans to the large pot with enough water just to cover. Season with salt and bring to a boil over medium heat.
- Reduce heat to low and simmer until cooked through, 8 minutes.
