Flourless Chocolate Orange Loaf

  1. Preheat oven to 375 degrees F.
  2. Zest 1 orange into a medium-sized mixing bowl. Cut the orange in half and squeeze into a small bowl (should be about 3 tbsp of juice).
  3. To make the "chia eggs": Add chia seeds to the orange juice bowl. Add 3 tbsp water. Stir and put in the fridge for about 10 minutes, or until it forms a gel.
  4. If using frozen cauliflower and/or carrots, defrost in the microwave and squeeze out any water.
  5. Add all ingredients to the mixing bowl with the zest in it. Stir well to combine. You can also put this in a mixer or a food processor to get rid of any vegetable chunks ;)
  6. Line a 5x9" loaf pan (or a small round one like I used) with parchment paper and add the batter.
  7. Bake for 30 - 45 minutes or until a fork or toothpick comes out clean. Let cool on a cooling rack before slicing.
  8. For candied orange slices: cut the orange into quarters and remove the peel and pith (the white part) with a paring knife. Cut the orange peel into thin strips.
  9. Squeeze the inside of the orange into a saucepan. You'll get about 1/4 cup of orange juice (don't worry, the amount doesn't need to be exact).
  10. Add 1/4 cup of water to the saucepan and add the orange peel strips.
  11. Bring the mixture to a boil and boil for 2 minutes. Drain off the water and discard it.
  12. Simmer the orange peel for 10 minutes.
  13. Remove any water (it will be delicious orange syrup at this point) and drizzle over your loaf. Put the orange peels on a rack to dry for ~1 hour.
  14. Top your loaf with the candied orange peel, wrap in wax paper, tie a ribbon around it, and enjoy!
