Citrus Semolina Cake

  1. Preheat oven to 350u0b0F. Grease and line an 8 inch cake pan. Combine semolina, almonds and baking powder. Set aside.
  2. Whisk together eggs and sugar until pale and thick. Add olive oil, citrus zest and 2 tbsp orange juice. Gently fold into semolina mixture then transfer to cake pan and bake for 45-50 mins, until a skewer inserted in the center comes out clean. Let cool in pan then invert onto a serving plate.
  3. Meanwhile, to make the citrus syrup, stir sugar and 3/4 cup water in a pan over medium heat until sugar dissolves. Add remaining ingredients and increase heat to high. Simmer for 10 mins, until syrupy. Drizzle over cake.
  4. Top cake with orange segments and dust with powdered sugar. Serve.
