Raspberry Donuts

  1. In a large pot for frying, add enough vegetable oil so the oil is about 2 inches up from the bottom of the pan. Heat should be about medium.
  2. In the meantime, roll out your pizza dough to about 1/2 inch thick. Make sure there is enough flour on your board so the dough doesn't stick.
  3. Using a round cookie cutter and an apple corer/something else small and round, cut out your donuts.
  4. Gather the scraps and re-roll to make more donuts. I don't' have a candy thermometer, so I can't tell you the temperature, but you'll know that the temperature of your oil is at the right temperature when you add a piece of the dough and it immediately bubbles up to the top.
  5. Once the oil is at the proper temperature, drop in your donuts and cook on each side for about 30-40 seconds.
  6. Drain onto a plate lined with paper towels.
  7. In a small bowl, macerate about 1/2 a handful of raspberries with either your hands or a fork.
  8. Add 1 cupd of sifted powdered sugar and mix vigorously until you create a glaze/frosting.
  9. Add more powdered sugar to get a relatively thick glaze/loose frosting texture.
  10. Dip the donuts into the glaze/frosting.
  11. Let set for a few minutes and then eat!
