Chilli Shrimp With Salsa Fresca
- 16 jumbo shrimp peeled, deveined, tails intact
- 16 bamboo skewers, soaked
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 clove garlic crushed
- fresca Salsa
- 1 avocado large, peeled, seeded, chopped
- 1 mini cucumber Turkish/, chopped
- 1 bunch cilantro chopped
- 1/2 red onion finely chopped
- 1 lime juiced
- 2 cloves garlic crushed
- Thread each shrimp onto a skewer, pushing tip up through center of tail.
- In a small bowl, combine oil, chili and garlic; brush over prawns to coat.
- Heat a grill or grill pan over medium heat. Grill shrimp 1-2 minutes each side, until cooked through and lightly charred.
- To make salsa fresca, combine all ingredients in a large bowl, toss and season to taste. Serve with shrimp.
