Fried Chicken

  1. Preheat oven to 400u0b0.
  2. Place butter and oil in large baking pan (about 9 x 13-inches) and set in oven to melt butter.
  3. (Watch carefully, so butter does not burn.)
  4. Combine bread crumbs, flour, salt, black pepper and cayenne in paper or plastic bag.
  5. Roll chicken all over in melted butter and oil, then shake pieces, one at a time, in bread crumb mixture until coated.
  6. Shake off excess coating, then place chicken, skin side up, in baking pan.
  7. Bake for 40 to 45 minutes in center of oven until coating is browned and crisp and chicken is cooked through.
  8. Yields 4 servings.
