Fried Chicken
- 3 Tbsp. butter
- 3 Tbsp. vegetable oil
- 1/2 c. unseasoned dry bread crumbs
- 1/4 c. flour
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. cayenne pepper
- 3 to 3 1/2 lb. chicken parts
- Preheat oven to 400u0b0.
- Place butter and oil in large baking pan (about 9 x 13-inches) and set in oven to melt butter.
- (Watch carefully, so butter does not burn.)
- Combine bread crumbs, flour, salt, black pepper and cayenne in paper or plastic bag.
- Roll chicken all over in melted butter and oil, then shake pieces, one at a time, in bread crumb mixture until coated.
- Shake off excess coating, then place chicken, skin side up, in baking pan.
- Bake for 40 to 45 minutes in center of oven until coating is browned and crisp and chicken is cooked through.
- Yields 4 servings.
