Salmon With Cilantro Pesto
- 4 ounces salmon fillets 6 each
- salt
- pepper
- vegetable oil
- 1 cup cilantro leaves fresh
- 5 tablespoons olive oil
- 4 tablespoons white cooking wine
- 3 tablespoons Parmesan cheese grated
- 2 tablespoons almonds slivered
- 2 cloves garlic
- 1/8 teaspoon salt
- Season salmon fillets with salt and pepper to taste.
- In a wide skillet, heat vegetable oil, around 2-3 tablespoons.
- Cook salmon skin side up until golden, around 3 to 4 minutes.
- Transfer to an oven-safe baking dish. Bake at 375 F until cooked through, around 8 to 10 minutes.
- Transfer to serving plates. Drizzle with cilantro-pesto.
- Puree all ingredients in blender, pulse first until finely chopped, then puree, scraping frequently until smooth
