Hawaiian Pineapple Cake
- 2 1/4 c. sifted Softasilk flour
- 1 1/2 c. sugar
- 3 1/2 tsp. baking powder
- 1 tsp. salt
- 1/2 c. soft shortening
- 2/3 c. milk
- 1 tsp. flavoring
- another 1/3 c. milk (after beating)
- 4 egg whites (1/2 to 2/3 c.)
- Sift together into bowl flour, sugar, baking powder and salt. Add shortening, 2/3 cup milk and flavoring.
- Beat 2 minutes.
- Add another 1/3 cup milk and the egg whites.
- Beat 2 more minutes. Pour into prepared pans.
- Bake until cake tests done.
- Cool.
- Put cooled layers together with pineapple filling, spreading about 1/2 cup over center of top layer.
- Frost sides and a 1 1/2-inch border on top with a fluffy white icing.
- Time:
- Layers 30 to 35 minutes, oblong 35 to 40 minutes, both at 350u0b0.
