Elena’S Eggs Au Gratin

  1. Pre-heat oven to 375o then butter up a 8x8in. pan
  2. Separate egg yolks from egg whites. Working only with the egg whites in a separate bowl, whisk together the whites, heavy cream, shallots, garlic & herbs.
  3. Assemble in order; Add yolks to buttered pan and pour egg whites mixture over the yolks. Sprinkle cheddar cheese and parm cheese over the mixture.
  4. Place in 3rd rack of the oven and let bake uncovered 30min
  5. Divide and serve with ciabatta bread & ENJOY!
