Chicken Drumsticks With Cabbage Slaw
- 1 green cabbage about 2 1/4 lbs, shredded
- 1 onion large, finely chopped
- 1/2 teaspoon salt
- 1 red pepper seeded and thinly sliced
- 3 tablespoons chopped parsley coarsely
- 10 tablespoons mild olive oil
- 3 tablespoons white wine vinegar
- 4 teaspoons granulated sugar
- 2 teaspoons ground paprika
- 18 chicken drumsticks
- parsley sprigs to garnish
- For the cabbage slaw, toss the cabbage with the onion and salt in a bowl. Let stand for 30 minutes. Stir in the red pepper and chopped parsley. Mix 6 tablespoons of the oil, vinegar and 2 tsp of the sugar with a wire whisk until well blended. Add to cabbage mixture; toss to coat. Set aside.
- Preheat the oven to 350u0b0F. Mix the remaining 4 tbsp oil, paprika, remaining 2 tsp sugar and a pinch of salt. Arrange the chicken in a large roasting pan. Brush with the paprika mixture. Bake for 45 minutes or until golden and cooked through.
- If desired, wrap pieces of parchment paper around the ends of the chicken drumsticks and secure in place with string. Transfer to a serving plate. Garnish with parsley. Serve with the cabbage slaw.
