Ground Beef Salad
- white rice cooked
- 1 1/8 pounds ground beef
- 3 garlic cloves
- 1 teaspoon paprika
- 1 onion medium
- 3 tomatoes medium
- 1 can black eyed peas
- black olives to taste
- olive oil to taste
- Cook the rice. When cooked, rinse in cold water so it remains fluffy and cool.
- In a skillet, fry the garlic cloves in drizzle of olive oil, on medium heat.
- Before the garlic browns, add the meat, separating well with a fork, season with salt and paprika and let cook. When the meat is cooked, remove from heat, and let cool.
- While the meat and the rice cool down, chop the onions and tomatoes in small pieces, and place in a large bowl.
- Add the olives.
- Add the cold rice and meat, and mix in the bowl.
- Drizzle with a bit of olive oil and serve.
