Sirloin Steak With Salad
- 4 tablespoons softened butter
- 2 tablespoons fried onions or crispy shallots
- 5 tablespoons red wine vinegar
- 8 tablespoons oil
- 28 ounces sirloin steaks tenderized
- 7 ounces baby greens
- 1 pound beets cooked, sliced
- 7 ounces baguette thinly sliced, toasted
- 3 ounces Parmesan cheese shaved
- Preheat oven to 400u0b0F. Combine butter and fried onions. Season then set aside. For the vinaigrette, season vinegar and add a pinch of sugar. Gradually whisk in 6 tbsp oil. Set aside.
- Heat remaining oil in a frying pan over high heat. Sear beef for 2 mins per side. Reduce heat, add onion butter and cook steaks for about 1 min. Season. Combine baby greens and beets. Toss with vinaigrette then sprinkle with Parmesan. Serve steaks with salad and warm bread.
