Beef And Cabbage Casserole
- 3 tablespoons vegetable oil
- 2 1/4 pounds lean minced beef
- 2 onions chopped
- 7 1/8 cups cabbage shredded
- 2 11/16 cups tomatoes skinned and roughly chopped
- 1 tablespoon plain flour
- 7/8 cup vegetable stock
- 6 3/4 tablespoons worcestershire sauce
- 2 cups self-raising flour
- 7 tablespoons butter
- 1 1/8 cups cheddar cheese grated
- 1/2 cup milk
- 1 tablespoon chopped parsley
- Heat the oil in a saucepan and add the ground beef. Cook stirring for 5 mins to brown. Add the onions and cook for 5 more mins. Stir in the cabbage and tomatoes and sprinkle in the all-purpose flour. Cook, stirring, for 3 mins. Add the stock and Worcestershire sauce and cook for 5 more mins until thickened. Season to taste and transfer to a shallow ovenproof dish.
- Preheat the oven to 350u0b0F. Put the self-rising flour in a bowl and add the butter, rubbing together with your fingertips until the mixture resembles breadcrumbs. Stir in 3/4 of the cheese and the milk and stir until smooth.
- Turn the dough out onto a floured surface and roll out to 2/3 inch thickness. Cut out small circles using a 2 inch cookie cutter and arrange around the edges of the ovenproof dish, on top of the beef. Sprinkle the remaining cheese on top and bake for 30-40 mins until golden. Sprinkle with chopped parsley to serve .
