Soft White Chocolate Chip Cookies With Cranberries And Pecans
- 1 cup softened butter
- 7 15/16 tablespoons granulated sugar
- 11/16 cup brown sugar
- 2 medium eggs
- 1 teaspoon vanilla extract
- 3 1/4 cups flour
- 3 pinches baking soda
- 1 1/8 cups white chocolate chips
- 1 1/4 cups dried cranberries
- 7 1/3 tablespoons chopped pecans
- With a food processor, beat the butter and sugar until creamy.
- Add the eggs and vanilla extract, beat until smooth.
- Add the flour and baking soda, mix well.
- Stir in chocolate, cranberries and pecans.
- Store the dough in the refrigerator for 1 hour wrapped in plastic.
- Preheat oven to 205 degrees Celsius.
- With a teaspoon, make small balls of dough, arrange them on a baking sheet lined with parchment paper. Flatten slightly and bake for 7-9 minutes.
- Allow to cool on a wire rack for 10 minutes before serving.
